As for your category sitemap, we might need to take a closer look at the settings. Please edit the first post on this ticket and include your WordPress login in the designated Sensitive Data section.

I was able to check that your tags were set as noindex in the global Titles & Meta settings. I have set them to index and now the post-tag sitemaps are being included in your main sitemap.
For your category sitemap, your categories are set as noindex in the Advanced tab of your meta box. Please edit the categories and set them as index in the Advanced tab to include them in the category sitemap.

Can you tell me where categories are set as no index? Here I see the index tag.
Only parent categories should be not indexed (Aree and Canali) and now Aree is the only one indexed.

Sorry for the confusion. I checked your first category and it was set to noindex. I have set that as index.
However, for the screenshot that you have shared, I can see that you have inserted the canonical URL manually. Rank Math sets the URL of the category as the canonical URL when that field is empty. If you insert it manually then it will be excluded from the sitemap.
Please remove the canonical URL from the field and leave that empty. Save the category and it will be included in the sitemap.
