When you update/modify a page under your category sitemap, the Last Modified date should be updated as well.
In case the date is not updating, please follow these initial troubleshooting steps:
1. Ensure you’re using the latest version of your plugins/theme including Rank Math.
2. Flush the Sitemap cache by following this video screencast:

3. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server:

I know that, but I have need to refresh the date on other event also, when category order is changed and when category article is saved, I did it on Yoast and now we want to migrate on Rank Math and is need to replicate here, you have some hooks to do that?

I checked for how to update the last modified for taxonomies in Yoast and could not find it. Could you share how you achieve it in Yoast? Here are some Yoast links for reference:

You may have to create custom term meta and hooks to get the results you want with Rank Math.
