In this case, please follow the below steps and see if that fixes the issue:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

I didn’t do the second thing because I don’t have a caching plugin nor Cloudflare. Do you think I should get such a plugin?

Cloudflare is one of the best caching services available but it is also a practice to use caching plugins on top of Cloudflare.
However, it all depends on the performance/speed of your website. If the website works great only with Cloudflare, then you can avoid using any other caching plugin.

Another question:
I have 15 excluded pages when I look at my “coverage” report on GSC. Many of them are pages that came with the WordPress Theme and I don’t use or need them.
Problem is, I don’t know where to find them on the server, so I can delete them.
I’m using Blocksy theme. Do you have any idea how to find them?

Can you please share those template pages that are showing in your GSC coverage?
If you believe these pages are no longer exist, you may try to remove all your sitemap/s from Google Search Console and submit only the primary sitemap (sitemap_index.xml) and see if that fixes the coverage issue.
