When you disable category archive pages from the sitemap settings, it only excludes your category sitemap from the sitemap index. You have to set a noindex robots meta tag separately to the category archive.
If you want to exclude category archives from the sitemap file then head over to Rank Math > Sitemap Settings > Categories > Disable Include in Sitemap.
To set a noindex tag to category archives navigate to Rank Math > Titles & Meta > Categories > Enable Category Archives Robots Meta > select the checkbox next to No Index.

So i created website/blog as a page but blog is a category i have created if i noindex
Include in Sitemap
Include archive pages for terms of this taxonomy in the XML sitemap.
inside rankmath settings that shouldn’t noindex the website/blog page right?

If you exclude categories from your sitemap then it will only exclude the blog category and will not affect your blog page. You can disable that option if you want to exclude the categories from your sitemap without worrying about the blog page.
