Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Once done, clear your website and browser cache and check again.

If you don’t have a caching plugin then there should be a server-side caching that is causing the issue. Please get in touch with your host and check with them if there is server-side caching and if there is then exclude your sitemap from being cached.
