I logged into your website’s admin area and found that you’ve set a custom route for the 404s on your website.
The custom route does not return a 404 error. Please see the screenshot in the sensitive data section of this ticket.
Rank Math’s 404 Monitor only logs those URLs that, upon accessing, return 404 error and take to the default WordPress 404 page. Since that is not the case here, the 404s are not getting logged.
You may set the fallback behaviors to Default 404 from your WordPress admin area > Rank Math > General Setting > Redirects > Fallback Behaviour, to fix the issue.
