Do note that the sitemaps are set to noindex by default as you do not want them to get indexed and appear in the search results.
Also, the sitemaps should only be submitted in the Sitemaps section in the Search Console and not in the URL Inspection Tool.
Please exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Once done, resubmit the sitemap_index.xml in Google Search Console.

That should fix the issue.

I did as you said and it seems to work for the sitemap. Although when I inspect my url (https://www.byrde.swiss) it still says there are non index tags which I removed and that therefore my website is no on google

The passwords page is set to noindex and this might be causing the issue here as Google would also be seeing this noindex verification page when trying to crawl your website.
However, please share the access to your website so that I can also check the robots meta tag on your homepage.
