The %category% variable only works for posts. Currently, there is no variable to show product categories in the SEO title. You can modify and use this filter in your theme’s functions.php file to create a custom variable and use it inside the SEO title: https://rankmath.com/kb/filters-hooks-api-developer/#add-extra-variables
