One of the changes brought about by the latest version is better integration with Gutenberg. The SEO options are now available from the sidebar on the Gutenberg editor as shown on this screen cast: https://i.rankmath.com/U44EB5
If this change does not sit well with your workflow, please rollback to the previous metabox layout by adding the following PHP snippet on your theme’s functions.php file:

*/
add_filter( 'rank_math/gutenberg/enabled', '__return_false' );
