Please try to use with non www prefix on google search (site:bonsaialchemist.com) and you will see about 187 pages are indexed.

If some of the pages are not yet indexed, that is not an issue, and there is nothing to worry about since Google has already discovered the URL. All you need is to give it some time, and they should be indexed eventually.

We are already waiting for 3 weeks for GSC to index our new posts but with no luck, it keeps giving the error, “Discovered, not indexed” maybe there is something in Rankmath settings we are doing wrong?

I checked some of the posts on your website, they’re already set to index with Rank Math.
Discovered, not indexed, means that the Googlebot has already discovered those URLs.
Please note that it is completely upto Google if they want to index or not index your website. So, if you haven’t willingly or accidentally made your posts noindex and Google still isn’t indexing your page – it means that either Google doesn’t want to index or hasn’t crawled your page yet because it hasn’t allocated that much crawl budget to your website.
