The issue here seems to be caused by the Brizy builder not being able to retain the changes made after the content analysis is done.
At first, once you assign the image with the focus keyword in the alt text section, to the product it does reflect on the SEO content analysis. But upon saving the post this test does not appear to be saved.
There must be a glitch somewhere on the content analysis API as it works well without the Brizy plugin. Kindly contact the devs team from the brizy plugin so that they can check on the integration here.
Also, I have been able to replicate the issue from my end and will reach out to our devs team as well.

I don’t think that this have anything to do with the builder but with woocommerce.
I used the builder in previous case to edit ONLY long description.
I saw the same problem when I’m using classic editor (on another website)

I logged into your website’s admin area and upon investigating, indeed it seems like the issue is caused by the Brizy page builder. As I deactivated the Brizy page builder (using the Health Check troubleshooting plugin), the ALT text was detected without any issues.
