Please headover to Dashboard > Rank Math > Sitemap Settings > Taxonomies > Category :
And enable the “Include in sitemap” option.
After that flush the Sitemap cache by following this video screencast:

So, is it only the categories or other pages that could be missing too?
If you wish to include more pages inside sitemap you can look into the other options inside Sitemap settings.

sitemaps categories looks updated, this one looks solved, but
the second issue is that the submitted sitemap in the search console not showing all sitemaps.
In our sitemap_index.xml there are 17 different sitemaps, but the search, console shows only 10 – https://puu.sh/HHzVN/a4a2b66501.png

Thank you for your reply.
As your sitemap is just updated with the category and other pages soon, Google will index them, give Google at least a week, and your new URLs will be discovered and show inside SERPs.

Since your sitemap contains quite a lot of links this might be the reason why it is taking a while until Google adjusts to the latest update on your sitemap file.
As you can see that the sitemap works well and is actually being discovered. I have also checked and confirmed that it is not being cached at all.
Please note that Google allocates a crawl budget to every website and it stops crawling when it exhausts that budget. It is possible that Google hasn’t yet crawled your website and sitemap to find your site links.
You can as well confirm if the issue is really with the Rank Math sitemap by using a 3rd party sitemap plugin. Just make sure you have disabled the Sitemap module of Rank Math in WordPress Dashboard > Rank Math > Dashboard when using a 3rd party sitemap plugin.
