In these images show that I have as setting for a woocommerce product: %title% %sep% %sitename%,

but google is showing &title& %sep% %sitename% %sep% %category% %sep% %sitename%,

how can I fix this?

Please follow this tutorial guide to double-check the Meta settings on your Post as well as Global settings: https://rankmath.com/kb/different-meta-title-and-description/

Do note that if everything’s fine and Google still decides to show a different meta title/description, there is nothing you can do as Google sometimes ignores the custom meta info altogether and show something from the page’s content that matches the search intent better.
