1. Rank Math does not add the post date to the post meta, this value exists on your theme and I would suggest that you get in touch with the theme developers regarding the issue.

2. Please check if you have added the Sitename in the SEO Title fields of these posts. You may have a look at this screencast for a quick reference: https://i.rankmath.com/4kT5Wh

If the %sitename% is added, then you can remove it from your post as well as the Global settings (Rank Math > Titles & Meta > Posts), and give Google some time to crawl your website and update the changes.

Do note that if everything’s fine and Google still decides to show a different meta title/description for your post, then there is nothing you can do as Google sometimes ignores the custom meta info altogether and show something from the post’s content that matches the search intent better.
