1. You can split the sitemaps and set number of links per sitemap at Rank Math > Sitemap Settings

Please note that some options are only available once you enable Advanced Mode in Rank Math dashboard:

2. You only have to submit the sitemap_index.xml
in the search console.
3. sitemap_index.xml
is quite a common naming convention, but sitemap URL does not have any effect on SEO.

Thank you very much for your answers.
We have set up a demo site and we are trying the Rank Math plugin on the demo site.
The problem I have noticed now is that I have defined the demo site in the Search console, but the sitemap shown by the sitemap rank math is missing one.
Search console is showing one missing.

It looks like Google is seeing a cached version of your sitemap.
Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:
https://i.rankmath.com/pipRDp
2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
Once done, remove all the sitemaps from the search console and add the sitemap_index.xml
and wait for Google to crawl the sitemap.
