With Rank Math Free, you can submit your Sitemap to search engines even you have a lot of URLs in it.

Just ensure that the number of URLs shown per Sitemap should not exceed 5,000 or else your server might cause heavy loads when loading the Sitemaps and might affect your SEO performance as well. This is true for any SEO plugin out there.

Rank Math has a setting for that and you can set it your preferred value:
WordPress Dashboard > Rank Math > Sitemap Settings > General

After checking that setting, you can simply submit your Sitemap index file (https://yourdomain.com/sitemap_index.xml) to Google Search Console and Google will pick all the inner Sitemaps on its own.

No, you don’t have to submit all sitemap pages, you only have to submit the primary or the index sitemap and Google will read everything under it. The sitemap you only need to submit is this sitemap sitemap_index.xml. Google will take care of the rest of the sitemap pages. You don’t need to do this every day.

how many times that rank math automatically submit the sitemap to get 600,000 URLs indeed?

Rank Math will submit the sitemap to GSC once there are new content added to the sitemap.

Given the large number of your URLs, do note that this will take days or even weeks for Google to crawl your entire website.
