Thank you for contacting Rank Math, and sorry for any inconvenience caused.
Editing an already existing sitemap file is not possible with Rank Math, but if you have enabled the sitemap module in the Rank Math dashboard, then Rank Math will generate a virtual sitemap.
Once done, you need to replace the old sitemap link with the one generated by Rank Math in the Search Console.
Only submit the sitemap_index.xml file in the Search Console.

Just to confirm, I need to activate the sitemap setting in Rankmath which will create a virtual sitemap and appears as a new link in Search Console ?
Then delete the old sitemap in Search Console?

Then, check your sitemap at yourdomain.com/sitemap_index.xml
If everything is correct, replace the old sitemap with this new sitemap in the search console.
