Dear,
I try to make my posts seo proof and would like to add a meta description. But when I click edit snippet, I can change things and fill in my own meta description. But when I click on update post and then go back later it is gone. I also tried to go to ”schema” and then add headline and description. But also this is gone after I update the page. Where can I save what I have written down? Now the SEO score cannot become higher.

Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
