To be able to display the categories on the breadcrumbs, you need to select the primary taxonomy via Rank Math > Titles & Meta > Posts as shown below:
I have set this to category to display the breadcrumbs.

Thanks for the follow up.
Unfortunately our compatibility with Gutenberg is still basic and the “Primary term” features does not work on this editor.
To be able to display the primary term on the breadcrumbs, you will need to switch back to the use of the Classic editor. This is how this looks:

I am glad that this is now working.
Unfortunately we do not have control over this. Rank Math already add the breadcrumblist schema on your pages and it may take some time before these appear on the search results.
