The Headline is where you will need to enter the meta-headline or the SEO headline for your page/post. You can either write the headline manually or use supported variables to have Rank Math fetch the appropriate headline.
By default, it is set to %seo_title% to use your page/post’s title as the headline for schema, instead of adding the value every time.
The single page/post titles will be the ones that will show in search results. You can also check this link for more information:

The headline in schema, which is be default set to take the set SEO title in Rank math, is a required and recommended property according to Google when it comes to schema markup for your pages. For example if you check AMP article pages guidelines here: https://developers.google.com/search/docs/data-types/article#guidelines you will see the headline listed under required properties:
