Please check if you have enabled the Strip Category Base in Rank Math > General Settings > Links. It seems that it is enabled; that’s why your overall category pages cannot save the SEO metadata.

Strip Category Base is not enabled. I can save some of the general category seo settings. But now it also won’t save seo settings on some of my product pages. When ever I hit Update, it reverts back to the original format before seo settings where made.

Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Only the site admin would know and your users won’t be affected by this troubleshooting.
If the issue persists, please record a video screencast using a tool like Loom showing the troubleshooting and edit the first post on this ticket and include your WordPress & FTP logins in the designated Sensitive Data section.

First I would like to point out that you do have a good number of outdated plugins including Rank math. Please keep all your plugins and theme up to date.
Thar said, some of the posts you shared lead to 404. I was however able to update the meta description for the /frisor-service/ service and it updated without an issue, I have attached in the sensitive section a front end screenshot of the final description, please check.
If you are still having this issue from your end, please create a screencast with a tool such as https://www.loom.com/ and share in the sensitive section so we can look into it further.

I am actually only really concerned about the front page and it does not update fine. I have added a recording in the sensitive data section to show you that it does not update fine when you check it afterwards – it reverts back to zero in the seo settings and deletes my meta and title.
This has been an issue since before there was an update on rank math, but could it however be the need to update theme?
