The Rank Math default URL for sitemaps is your_domain(.)com/sitemap_index.xml, which is correct. If you have submitted it to Google, you will have to wait for Google to index your site content.

Could you clarify where you are seeing/getting the /sitemap.xml?
I’ve checked it, and it’s properly redirecting to your sitemap default file, which is /sitemap_index.xml
Also, Google prefers now the sitemap_index.xml files than the sitemap.xml, and if you have submitted your sitemap_index.xml, no need to worry and give it time to crawl your website.
