This issue usually happens when your URL(s) returns 4xx or 5xx error status. It can also occur when your page is loading too slow resulting to a timeout. Your page issue seems to be with speed, you can confirm by using this tool: https://developers.google.com/speed/pagespeed/insights/
Once yo have fixed the issues with the page speed, to make Google crawl your sitemap again, can you please follow these steps?
1. Please delete the sitemaps from the Google Search Console.
2. Clear all cache and exclude the Sitemap files of the Rank Math plugin

3. Add sitemap_index.xml file again to your Google Search Console.
That should do the trick
