Assuming you have the latest built version of Rank math: https://rankmath.com/changelog/, can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

If the issue persists, please share your sitemap URL so we can check from our end.
As for your images, Rank math adds the images to their related posts/pages in the sitemaps: https://i.rankmath.com/EFcmhc

Let me ask you another question, since you were so good to answer to the previous one.
My website has two languages, english and italian.
Pages in Italian have .com/it/
while pages in english end simply with .com
Should I have different sitemaps for different language?
Should I add .com/en/ to the English language?
Or is Google “smart” enough to show Italian sitelinks and pages to Italians, and english pages to english people?
