Taxonomy usually use schema data from the posts/pages in the taxonomy.
If you wish to add custom schema to your taxonomy pages, you can use this filter: https://rankmath.com/kb/filters-hooks-api-developer/#extend-json-ld-data
We do have an option to create schema templates in the pro version which have display conditions option with which you can add custom schema to specified taxonomies or all archive pages
