It seems to be working in analytics but not in GSC.
I’ve followed your suggestions.
Do I just need to wait?
Could removing the old/temporary domain have messed things up?
Also when I submit sitemap_index.xml to GSC it show 0 pages discovered. But when I submit page-sitemap.xml, post-sitemap.xml, and category-sitemap.xml the pages are detected. Does this mean anything? Should sitemap_index.xml be working?

If Google has already indexed your temporary URL, we suggest you create a 301 redirection from your temporary URL to your main URL.
Once the 301 redirects are in place and the live site is properly submitted on Google, it should recrawl and update its index over time. It may take a few days to a couple of weeks for changes to reflect fully in search rankings.
Regarding the sitemap, it is fully fine as the sitemap is only one of many ways Google discovers the URLs of your site. Since Google has already fetched your URLs from the sub-sitemaps, you can ignore this.
